One piece suit options

I was considering Difi(motoport) Ultra II pant but then the jacket is
not very comfortable (to say the least)
in the collar area (I'm not endowed with a pencil neck, there is no
fleece, the collar is not tall: i want a turtleneck
style windproof collar).
I'm skinny-fat and therefore freeze and overheat easily, and, thus,
I don't need the suit to work in summer. It only has to keep me warn
in winter.
What are my options. (I haven't kept abreast of gear development in
the last 5-7 years so
you can start at the fabric: has kevlar replaced heavy denier cordura?
drawbacks?).
Is aerostitch still the suit of choice? are they heavily backlogged
now?

I'm in the US and the temperatures are typically above 32F (0C) where
I live.
